The Lingot bean used in many traditional dishes was introduced to Europe
by Christopher Columbus. Catherine Medici ordererd it to be grown in the
region.  It's one of the ingredients of the Cassoulet which this region
prouds itself on.     

Many goat and ewes cheeses are produced locally and used in many dishes.
Served hot in salads a delicious main course.

The Lucque de Bize Olives are only produced in Languedoc Roussillon. Well
appreciated by connoisseurs their crescent shape and exquisite pulp make
it unique. The oil is used in many dishes as are the fruits.
