WINE DOMAINES AUDE LANGUEDOC ROUSSILLON

The Aude region is the oldest and largest wine area of France
with vines introduced by the Greeks and then cultivated by the
Romans. Today 290,000 hectares of vines flourish throughout the
area. Picked by hand the grapes produce some of the best wines
in France.

the best vineyards on route to all the Holiday Accommodation.

This region of
Languedoc Roussillon is famous for its Blanquette
the oldest Brut wine in the world and pre-dates champagne.  
Founded by the monks of St Hilaire in 1531 Brut, Demi Sec and
Ancestral are the varieties unique to the area.

Aude has 40 AOC appellations of controlled origin with 59
country wines.

The process of wine making is maceration with whole grapes by
gravity and temperature control. Various soils contribute to the
flavour of wine stony, clay and limestone are apparent in
Languedoc. Aged in wood the wine creates alchemy to give it's
unique taste. All wines are individual due to their aroma and
colour. The skin and pulp of the grape all add to it's charm.

Many villages like
Serres rely on the grape harvest as a natural
resource. The whole community work together to benefit from
each season's yield. Serres vineyards surrounding the holiday
villa produce an excellent Chardonnay and are used in the Salasar
Blanquette and Maurette's wines too.

Wine domaines scattered throughout the area offer you the
chance to sample their produce. Award winning labels they are
proud to allow you to purchase them too. Follow the route of the
vines from the Gite at Axat towards Perpignan where some
impressive domains also produce Muscadet. Aperitifs are popular
here. Byrrh produced in Thuir in 1866 is red wine based and
flavoured with quinine.

You can
walk or cycle from the Holiday Villa to our local domaine
Maurette. Taste some excellent Red, White, Rosé and Blanquette.
Honey and raisin juice is sold too.
